Volcán Azul Typica Lima

This is our second year working with Alejo's Volcan Azul.

If you enjoy coffees that explore beyond “just great but standard” into more exotic/flavour-forward territory (fermented, fruit-driven, unique varietal), this is a strong candidate.

Nestled on the lush, volcanic slopes of Costa Rica’s Central Valley, the Volcán Azul estate is renowned for its commitment to specialty coffee excellence. Under the stewardship of Alejo Castro Kahle, this farm has cultivated generations of expertise, combining traditional knowledge with modern innovation. The Typica Lima lot thrives at altitudes between 1,500–1,750 meters above sea level, where the cooler climate and nutrient-rich volcanic soils slow cherry maturation, allowing for enhanced flavor development and exceptional cup clarity.


After the cherry depluped, cherries undergo fermentation in sealed tanks for several days under controlled temperatures, followed by precise drying on patios or raised beds. This method accentuates the fruit character, builds complexity, and adds subtle fermentation nuances without overwhelming the varietal’s clarity.

About the farm: The history of Volcan Azul and Alejo’s family is deeply intertwined with the development of Costa Rica’s coffee industry. The family’s journey began in the early 19th century with Alejo Castro Jiménez in Costa Rica and Wilhelm Kahle in the south of Mexico after acquiring land in the fertile highlands of Costa Rica. Today this place is referred to as Hacienda Colima, a farm still owned and operated by Alejo.
