Rayos de Sol

Rayos del Sol is a cooperative-grown Peruvian coffee from the high-altitude farms in Cajamarca—especially in Santo Tomás, Pimpingos, and Ihuamaca. Led by third-generation producer Percy Pintado and his family, the farm spans about 5 hectares at around 1,800 m.

Percy is deeply committed to producing exceptional coffee, carefully selecting only the ripest cherries from his farm to ensure the highest quality in every batch. The cherries are harvested at their peak maturity, then depulped, washed, and placed on raised beds to dry slowly for 15 to 20 days, depending on weather conditions. This drying method promotes ideal airflow, allowing the cherries to dry evenly while retaining their delicate flavors. Percy closely monitors the process, ensuring the beans reach the target moisture level of 11% for optimal taste and consistency.

This coffee is part of a sourcing program through an organisation called Origin Coffee Lab. The coffees are either micro lots or communal producer blends from the areas in the north around Jaen and San Ignacio. The farms are normally between 1-3 hectares and are family run. They harvest, pulp, ferment and dry the coffees at the farms. If the producers are part of a premium program, like ours, they will more likely invest in their production to create potential micro lots.
